These Singapore Mei Fun style angel hair pasta are made with loads of veggies and the best homemade curry sauce. This recipe taste just like takeout(or maybe better) but made in the comfort of your home!

—Ingredients—
* 1/2 lb Angel hair spaghetti 
* 1 tbsp curry powder
* 1/2 tsp turmeric 
* 1 tbsp ginger
* 1 tbsp crushed garlic
* 1 tsp red chili flakes
* 1 onion, thinly sliced
* 1 medium red capsicum, thinly sliced
* 1 medium carrot, julienned 
* 1 cup shredded napa cabbage
* 1/2 cup bean sprouts
* 1/2 cup snow peas (sliced thinly)
* cilantro, garnish 
* scallions, garnish

—Curry Sauce—
* 1 tbsp curry powder 
* 2 tbsp soy sauce
* 1/2 tsp sugar
* 2 tbsp rice wine vinegar 
* 1 tsp sriracha(optional)
* 1 tsp white pepper powder 
* 2 -3 tbsp reserved pasta water

Whisk all the ingredients and keep it aside.

—Instructions—
* Boil angel hair spaghetti as per box direction and reserve pasta water. Drain and rinse.

*  In a large wok, add oil and set the heat to medium and fry 1 tbsp curry powder & turmeric powder for about 30 seconds. Then add in red chili flakes, ginger, garlic and onion and fry until aromatic. Then add in all the veggies. Cook veggies for 3-4 minutes. Don’t overcook them.

* Add pasta and curry sauce to the veggies mixture and and mix well. Cook for 2 minutes.

* Adjust the salt/seasoning according to your taste. Stir in green onions, bean sprouts and cilantro, then remove from heat and serve it with chili oil & enjoy.

—Note—
* You can easily add eggs, tofu, chicken or shrimp with noodles. Just stir fry them separately with curry powder and soy sauce and add them to the noodles.

This ruby red cocktail is what you need to kick off the festive season!! Vibrant, cheerful, gingery and bubbly. The Pomegranate Ginger Paloma is made with grapefruit juice, pomegranate juice, lime juice, tequila and homemade ginger simple syrup and a splash of soda.  It’s easily made in a cocktail shaker or it can be made in pitcher for a crowd too!!

Pomegranate Ginger Paloma
* 3 oz pomegranate juice
* 2 oz grapefruit juice
* 1 oz lime juice
* 1.5 oz ginger syrup, recipe above
* 2-3 ounces tequila
Toppings
* Club soda
* Mint
* Pomegranate arils

—INSTRUCTIONS—
* Add few ice in cocktail shaker and add tequila, grapefruit juice, lime juice, ginger syrup, and pomegranate juice. Shake for 20 seconds.
*Pour cocktail mixture over ice and top with splash of a club soda and garnish with mint & pomegranate arils.

GINGER SYRUP
* 1 cup water
* 1 cup sugar
* 10 slices of fresh ginger 
* 10-15 leaves mint
Add the sugar, water, ginger and mint to a small saucepan over medium heat. Stir until sugar is dissolved. Let this mixture boil gently for a few minutes in law flame and cover the pan and let it simmer for 2-3 minutes. Double-strain the mixture and store in a jar.

My Hot Mexican Cream Cheese Dip is the ultimate party appetizer! It’s baked and loaded with jalapeno, cream cheese, corn , black beans, bell peppers and melty cheese!

This recipe is super popular on my blog. If you’re making one dip this holiday season let it be this one.

There are never any leftovers when I serve this at a party! Make ahead of time and bake when ready to serve. Easy and delicious Mexican dip!!

—INGREDIENTS—
* 8-oz. blocks cream cheese, softened
* 1.5 cup frozen corn, thawed 
* 1 can Rotel Diced Tomatoes and Green Chilies
* 1 (15 oz ) can black beans, drained & washed 
* 1 red bell pepper, diced
* 1 green bell pepper, diced 
* 4 clove Garlic, minced 
* 2 jalapeños, minced 
* 2 tablespoons taco seasoning
* 2 tsp cumin powder 
* 1 tsp cayenne pepper 
* 1 cup shredded pepper jack
* 1 1/2 c. Shredded Mexican blend
* ½ cup chopped cilantro
* 1/4 cup milk
* 1 tbsp oil

—INSTRUCTIONS—

1. Preheat the oven to 375 f degrees.
2. Heat oil in a skillet over medium heat; add garlic and jalapeño and cook for 2 min. Add bell peppers and corn and stirring occasionally until veggies are softened a little.
3. Add black beans, spices, cilantro, can of rotel tomato and salt and cook for 3-4 minutes and remove from the heat.
4. Add the softened cream cheese and fold in.
5. Mix in pepper jack cheese, 1 cup Mexican blend cheese and milk.
6. Transfer dip to an ovenproof skillet and top with remaining 1/2 cup cheeses. Cover with foil and bake until warmed through and bubbly, 15 minutes.
7. Garnish dip with cilantro and your favorite toppings and serve with tortilla chips!!

Hosting a Diwali party this festive season and still deciding on what quick & easy fusion dessert to serve to your guest to impress??Don’t worry #mtrhaina 

Make this super easy and delicious Almond & Coconut Kheer Cups using @mtrfoodsusacanada Badam Milk which comes together in less than 20 minutes. I made seviya kheer using @mtrfoodsusacanada Badam milk which makes creamiest and most flavorful kheer with authentic taste that took me back to my childhood!
 
These cute little dessert cups are layered with crumble of Naan Khati cookies, blueberries, Almond & Coconut Seviya Kheer and topped it off with pistachio & Raspberries!! 

—Kheer INGREDIENTS—
* 1 tbsp ghee clarified butter
* ½ cup vermicelli seviyan, roasted
* 4(6 oz) can of @mtrfoodsusacanada Badam milk
* 1 cups whole milk
* 2 tbsp crushed pistachio, more for garnish
* 2 tablespoon almonds sliced
* ¼ unsweetened shredded coconut
* 2 tsp cardamom powder
*  ½ teaspoon saffron
* 1 tbsp @bobsredmill almond flour
* ⅛ tsp salt

—Kheer Cups—
* Almond & Coconut Nankhatai
* 1.5 cup blueberries 
* 2 cup raspberry 
* 2 tbsp pistachio, crushed
* 15 - 5(oz) dessert cups

—INSTRUCTIONS—
* Heat  ghee in a pan, add the pre roasted vermicelli, and roast on a medium flame for 30-45 seconds.
* Add Badam milk, plain milk, cardamom powder, nuts, saffron, coconut and salt. and let it simmer medium-low heat for about 10 mins stirring intermittently to prevent burning.
* Once the vermicelli is fully soft and cooked, add in the almond flour. Mix well. Simmer for 2 mins until the kheer has thickened and is creamy.
* Delicious, creamy, and thick Vermicelli Kheer (seviyan kheer) is ready!!

—ASSEMBLE CUPS—
* In a doubles ziplock add Naankhatai cookies using rolling pin crumble it coarse consistency.
* Layer each individual cup with crumbled Naankhatai then few blueberries, 2 tbsp seviyan Kheer and top it off with some raspberries and pistachio.
