Trio of Dips

Queso Blanco, Jalapeño Avocado Crema, White Corn Guacamole. These Mexican inspired appetizer offer triple the fun! They can be enjoyed with some tortillas, tacos, burritos and of course margarita. These dips pretty much go with anything and everything.

INGREDIENTS

  • Queso Blanco
  • 2 tbsp butter

  • 1 tbsp flour

  • 1 1/2 cup milk

  • 8 white American cheese slice

  • 1 jalapeño, finely chopped

  • 2 tbsp cilantro, chopped

  • 1 tsp freshly minced garlic

  • 1/2 cup white onion, finely chopped

  • 1 tsp cumin powder

  • 1 tsp taco seasoning

  • Jalapeño Avocado Crema
  • 1 ripped avocado chopped

  • 1 cup cilantro

  • 2 jalapeño

  • 2 cloves of garlic

  • 1/2 tsp cumin powder

  • 2 tbsp lime juice

  • 2 tbsp sour cream or yogurt

  • 1 tbsp water

  • Salt per taste

  • White Corn Guacamole
  • 3/4 Cup White Corn Kernels

  • 1/2 Cup Black Beans – drained & rinsed

  • 1 Avocado, 1/4″ diced

  • 1/2 Cup Red onion, Diced

  • 1 Jalapeno Peppers, Finely Minced

  • 1/4 Cup 3-Color Peppers, Diced

  • 2 Tbs Chopped Scallion Greens

  • 2 Tbs Chopped Fresh Cilantro

  • 2 Tbs Fresh Lime Juice

  • Salt per taste

INSTRUCTIONS

  • Make Queso Blanco
  • Melt butter in a pan on low heat and add chopped jalapeno, garlic and onion powder, salt & pepper and cook for 1-2 minute.
  • Add flour and whisk in continuously until you can smell a nutty aroma and flour is slightly golden in color. (about 1-2 minute)
  • Slowly pour in the milk and whisk mixture with the other hand. Continue to whisk until the sauce has thickened about 3 minutes.
  • Now lower the heat and add sliced cheese. keep whisking while you are adding the cheese. Wisk until sauce is smooth.
  • Add cilantro right before serving and mix well and serve warm.
  • Make Jalapeño Avocado Crema
  • Add all the ingredients in a food processor or blender, pulse 3 -5 times. Blend until everything finely blended and desired texture and serve.
  • Make White Corn Guacamole
  • In a mixing bowl, combine all of the ingredients together except the avocado and mix well and set aside.
  • Add diced avocados to mixing bowl with other veggies. Gently mix until it becomes creamy while maintaining the shape of the avocado and serve.
