Puerto Rican Rice & Beans

Any rice and beans lover knows that Puerto Rican rice and beans are like no other. It includes sofrito to give it the unique mouthwatering taste. Sofrito is made of peppers, onions, herbs and some spices.

This recipe makes for a perfect side dish or you can enjoy a big bowl as a main course!

INGREDIENTS

  • 2 tbsp oil

  • 2 cups Basmati Rice

  • 1/2 cup sofrito (seasoning Sauce, see recipe below)

  • 1 (15 oz) can Pigeon peas (wash and drained)

  • 5 ounces can of tomato sauce

  • 1 sazon packet

  • 2 tsp adobo seasoning

  • 1 tsp ground cumin

  • 1 tsp oregano

  • Salt to taste

  • 4 cup water or stock

  • Sofrito Ingredients
  • 6 garlic cloves

  • 1 white onion

  • 2 Jalapeno

  • 1 red bell pepper (stemmed and seeded)

  • 2 green Cubanelle peppers

  • 1 bunch fresh cilantro

  • Add all ingredients to a chopper and process until finely chopped.

INSTRUCTIONS

  • Heat oil in a pot over medium heat. Once oil is hot add the sofrito, tomato sauce, and sazon. Stir together and cook for 2-3 minute, until fragrant.
  • Add the rinsed rice and beans, adobe seasoning, cumin powder and oregano to the pot and mix with the other ingredients.
  • Add water or stock and add salt per taste.
  • Bring rice to a boil. Once at a boil, lower heat to a soft simmer and cover the pot and cook for about 15 -20 minutes, until rice is tender and cooked through.
