
After hard workout you need protein packed meal. This salad has farro, mango, basil, peanuts, cucumber, cilantro, tomato and onion. For spice I added serrano pepper. Farro is a whole grain and it’s packed with full of fiber, protein, vitamins, minerals and antioxidants.

Mango Farro Salad

1 cup Farro, cooked in salted water
1 Green Mango, diced
1 medium onion, diced
2 medium tomatoes, diced
2 green chillies, finely minced
1/4 cup english cucumber, diced
1/4 cup roasted peanuts
2 tbsp basil, chopped
2 tbsp cilantro, chopped
1 tsp Methi masala( pickle masala)
1/2 tsp chaat masala
1/2 tsp chilli powder
1/2 tsp cumin powder
Salt to taste
2 tsp lime juice
INSTRUCTIONS
- In a sauce pan boil water. Once it comes to boil add the washed farro and salt. Boil till the pearls are soft.
- Drain the farro and let it completely cool. Meanwhile chop all the veggies and fruits. Mix all the salad ingredients gently and enjoy!!
