Mango Farro Salad

After hard workout you need protein packed meal. This salad has farro, mango, basil, peanuts, cucumber, cilantro, tomato and onion. For spice I added serrano pepper. Farro is a whole grain and it’s packed with full of fiber, protein, vitamins, minerals and antioxidants.

INGREDIENTS

  • 1 cup Farro, cooked in salted water

  • 1 Green Mango, diced

  • 1 medium onion, diced

  • 2 medium tomatoes, diced

  • 2 green chillies, finely minced

  • 1/4 cup english cucumber, diced

  • 1/4 cup roasted peanuts

  • 2 tbsp basil, chopped

  • 2 tbsp cilantro, chopped

  • 1 tsp Methi masala( pickle masala)

  • 1/2 tsp chaat masala

  • 1/2 tsp chilli powder

  • 1/2 tsp cumin powder

  • Salt to taste

  • 2 tsp lime juice

INSTRUCTIONS

  • In a sauce pan boil water. Once it comes to boil add the washed farro and salt. Boil till the pearls are soft.
  • Drain the farro and let it completely cool. Meanwhile chop all the veggies and fruits. Mix all the salad ingredients gently and enjoy!!
