Tom Yum Ramen Noddle Soup

2 tsp oil
1 tsp garlic, minced
1 tsp ginger, minced
1 cup mushroom, sliced
3 tbsp Maesri Tom Yum paste
1 tbsp soy sauce
1 tbsp lime juice
1 tbsp fish sauce
1 tbsp sriracha
1 stick Lemongrass cut into 2 inch sticks (optional)
1.5 tsp brown sugar
4 cups vegetable or chicken broth
5 oz. Ramen Noodles (cooked according to package directions)
1/2 cup cilantro leaves + stem
1/4 cup scallions(green part), thinly chopped
INSTRUCTIONS
- Heat oil in a soup pot. Add garlic, ginger, and stir for a minutes until fragrant.
- Add tom yum paste and cook for about 2-3 minutes until the paste becomes darker in color.
- Add broth and bring to a simmer. Reduce heat to low and add mushrooms and chopped lemongrass.
- Add soy sauce, fish sauce, sriracha. Continue to cook for 4-5 minutes. Add cooked ramen noodles, brown sugar & lime juice and stir.
- Remove from the heat and add scallions and cilantro. Serve hot and enjoy!!(discard lemon grass before serving)
