Tom Yum Ramen Noddle Soup

1 tbsp oil
1 tbsp garlic, minced
1 tsp ginger, minced
1 small white onion, sliced
1 cup mushroom, sliced
3-4 tbsp Maesri Tom Yum Paste
1 tbsp Soy Sauce
2 tbsp lime juice
1 tbsp fish sauce
1 tbsp sriracha
3-4 cups vegetable or chicken broth
Salt to taste
5 oz. Ramen Noodles (cooked according to package directions)
1/4 cup scallions, thinly sliced
1/4 cup cilantro, chopped finely
INSTRUCTIONS
- Heat oil in a soup pot. Add garlic, ginger, onion, mushroom and salt and stir for few minutes until fragrant.
- Add tom yum paste and cook for about 4-5 minutes until the paste becomes darker in color.
- Add broth and bring to a simmer. Reduce heat to low and add soy sauce, fish sauce, sriracha and cooked ramen noodles. Continue to cook for 2-3 minutes.
- Remove from the heat and add scallions and cilantro!
- Serve hot and enjoy!!
